while some race horses may be treated as you describe, i don't believe that's average for the typical race horse. i have 2 friends that are racing horses and both treat their horses just like i treat mine. neither one is making much money, but they're attached to their horses and have them turned out with other horses, etc, when they're not at the race track. neither start their horses in the harsh way that's described here.
my mare, sing, is an OTT from KY. she's had a good life as well. i sent for her racing history and she was a slow runner, never won or placed, yet was treated well and kept until age 4 as a potential brood mare until they sold her.
